Vesali Fiano Campania Igp
Fiano Campania Igp has an elegant and unmistakable drinkability and reveals the peculiarity of the terroir and the unique altitude and exposure of the vineyard of origin. It is an intense and bright straw yellow, and the nose offers a dense and lively extension of fragrant notes of chamomile, moss, acacia and eucalyptus adorned with honeyed puffs and nuts. The mouth is full, savory, admirably harmonious and expressive, endowed with pleasant freshness and excellent persistence.

The grapes of Fiano Campania Igp are harvested by hand in early October and are chilled before being subjected to crushing and destemming. The cold pellicular maceration process, which contributes to the enhancement of this wine's personality, is followed by soft pressing of the berries and clarification of the free-run juice by natural decantation. Once the yeasts are inoculated, the wine begins a long alcoholic fermentation, at low temperature, in refrigerated stainless steel vats and in small wooden barrels (10% of the total). Aging takes place on fine lees with frequent batonnage. Maturation in the bottle lasts about ten months. The use of sulfur is limited and judicious until bottling.
